Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Quail
Forms the main protein; browning first gives it colour and a richer flavour.
Fresh pork fat
Carries heat for browning and adds richness and savoury flavour to the vegetables.
White cabbage
Softens during braising, becoming tender and sweetly mild as it absorbs the cooking liquid.
Carrots
Add natural sweetness and body as they soften in the braising liquid.
Stock
Provides the cooking liquid that steams and tenderises the vegetables and quail.

The step that matters

Browning the quail in the pork fat. Searing creates browned surface flavours through the Maillard reaction. Rushing this step or crowding the pan leaves the birds pale and steamed, giving a flatter taste.

Swap the cabbage

How well each one fits the dish's main ingredients (quail, pork, carrot, onion, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Turnipfits better
