Spiced Beef

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Cure

  1. Rub the beef with salt, spices, and saltpeter.

  2. Pour water over the beef.

  3. Place it in a covered bucket just large enough to hold it and turn it daily for 10 days.

Wrap and bake

  1. After 10 days, wrap the beef in a dough made of flour and water.

  2. Pour 1 pint of water around the beef and baste frequently.

  3. Bake in a 300°F (150°C) oven for about 4 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds sweetness and helps the surface brown during baking.
Powdered allspice
Contributes warm, aromatic flavour that penetrates the beef during the cure.
Powdered cloves
Contributes strong, aromatic spice flavour to the cured beef.

The step that matters

Turning the beef daily during the 10-day cure. Turning redistributes the salt, spices and liquid so the cure penetrates evenly. Without it, the surface can become over-salted while the centre stays underseasoned and less preserved.

Swap the clove

How well each one fits the dish's main ingredients (beef, allspice, sugar):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Clovethe original
  4. Gingerfits about as well

Fit is the average pairing score against beef, allspice, sugar. Candidates are from the same food group and used in at least 100 recipes.
