Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard base

  1. Dissolve the mustard in the milk, then add salt and cayenne pepper.

  2. Place the cheese in a baking dish and pour the milk mixture over it.

Assemble and bake

  1. Add small pieces of butter on top.

  2. Break the eggs whole onto the cheese.

  3. Add the remaining butter and bake for about 15 minutes at 350°F (175°C).

What each ingredient does

Eggs
Set into a firm, tender layer as they bake, forming the body of the dish.
Grated cheese
Melts into a rich, savoury base that binds with the eggs and browns on top.
Milk
Adds moisture and creaminess, keeping the eggs soft rather than dry.
Butter
Adds richness and helps the top brown as it bakes.

The step that matters

Break the eggs whole onto the cheese. Eggs cook quickly once they meet heat, so the whites set around the yolks at different rates. Keeping the yolks intact and watching the bake time helps the eggs stay tender rather than overcooked and rubbery.

Swap the mustard

How well each one fits the dish's main ingredients (egg, milk, cheese, pepper, butter):
