Mushrooms and Tomatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Toast the bread and cut it into round pieces, 2 inches in diameter.

  2. Butter the toasted bread.

  3. Peel the tomatoes and cut them into thick slices.

  4. Lay the tomato slices on the toast.

  5. Place a peeled mushroom on top of each tomato slice.

  6. Put the assembled toast in a baking dish.

  7. Pour a little clarified butter over them.

  8. Bake in a hot oven at 400°F (200°C) for 5 to 8 minutes, basting well before serving.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
