Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Artichokes
Provide the main flavour and body of the cream once simmered and sieved.
Onions
Browning in butter builds sweetness and a deep savoury base for the cream.
Butter
Fat that carries the onion flavour and helps the onions brown.
Flour
Thickens the liquid so the cream becomes smooth and body-rich.
Milk
Adds richness and creaminess to the simmered mixture.

The step that matters

Frying the onions until brown. Browning onions in butter develops sweet, deeper flavours through the Maillard reaction. Pale onions give a flat, less complex base, while over-darkened onions turn bitter.
