Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the curd when rennet sets its proteins, becoming the body of the dish.
Prepared rennet
Enzyme that clots the milk into a soft curd.
Fresh cream
Adds richness and a smooth, fatty mouthfeel to the curd.
Loaf sugar
Adds sweetness to the curd and cream.

The step that matters

Draining without pressing. Pressing the curd forces out moisture and makes it dense and grainy rather than soft and tender. Letting it drain slowly under its own weight keeps the delicate texture intact.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, cream, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Peppermintfits less well

Fit is the average pairing score against milk, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
