Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and yolks give the batter lift and a light, airy structure.
Flour
Provides the set structure that holds the wafer's shape once baked.
Melted butter
Adds fat for tenderness and rich flavor, and helps the wafers brown lightly.
Powdered sugar
Sweetens the batter and helps it brown in the waffle iron.
Milk
Adds moisture that loosens the batter and contributes to its tender texture.

The step that matters

Bake in waffle irons, browning as little as possible. Wafers become brittle and bitter once sugars caramelize too far. Removing them while pale and still pliable keeps them tender enough to roll while hot.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, flour, butter, sugar, milk):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Jalapenofits less well
  4. Capersfits less well

Fit is the average pairing score against egg, flour, butter, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
