Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Remove the gills from the oysters and loosen them from the shells.

Bake

  1. Dredge fine bread crumbs in the shells and replace the oysters.

  2. Cover the oysters with more bread crumbs and bake until lightly browned.

  3. Pour 1 teaspoon of melted butter over each oyster and dust with coarse sea salt and a pinch of cayenne.

Serve

  1. Serve four or five oysters on a plate with a quarter of lemon in the center.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main body of the dish, cooking gently in their shells to stay tender.
Butter
Adds richness and moisture, and helps the bread crumbs brown.
Fine bread crumbs
Form a crisp, golden crust that protects the oysters from drying out.
Lemon juice
Adds acidity that brightens the rich butter and seafood flavor.

The step that matters

Bake until lightly browned. Oysters cook quickly and turn rubbery if overbaked. Watch for a light golden crust on the crumbs and pull them from the oven before the oysters firm up and dry out.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, butter, pepper, bread):

  4. Grapefits less well

Fit is the average pairing score against oyster, butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
