Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold boiled fish
Forms the main body of the croquettes and gives them their flavour.
Mashed potatoes
Adds body and moisture so the mixture holds together when shaped.
Eggs
Bind the mixture so the croquettes keep their shape while frying.
Crumbs
Form a crisp, golden coating that browns in the hot oil.

The step that matters

Frying in hot oil. If the oil is not hot enough, the croquettes absorb excess oil and turn greasy before the coating browns. Hot oil sets the crumb crust quickly, sealing the surface and keeping the inside moist.

Swap the potato

How well each one fits the dish's main ingredients (fish, egg):

  1. Asparagusfits better
  2. Chivefits about as well
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against fish, egg. Candidates are from the same food group and used in at least 100 recipes.
