Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Dissolves into the water to sweeten the ice and lowers its freezing point for a softer texture.
Lemon juice
Provides the sharp acidity and main flavour of the ice.
Lemon rind
Adds aromatic oils that deepen the lemon fragrance during infusion.
Egg whites
Trap air when beaten, adding lightness and a fluffy body to the frozen ice.

The step that matters

Gently stir in the beaten egg whites. Overmixing knocks out the air beaten into the whites, making the ice dense rather than light. Folding gently keeps the foam intact so it stays airy after freezing.

Swap the lemon
