Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the sour acidity and the aromatic oils from the peel that flavour the ice.
Sugar
Sweetens the ice and lowers its freezing point, keeping it softer and less solid.
Orange
Adds sweetness and extra fragrance to balance the lemon's sharpness.

The step that matters

Beating the mixture during freezing. Freezing without breaking up ice crystals makes a coarse, hard ice. Stirring or beating during freezing keeps crystals small, giving a smoother, more even texture.
