Stuffed Beef

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Take a thin roll of beef and fill it with a dressing made from bread crumbs, cracker crumbs, butter, pepper, coarse sea salt, sage, and finely-chopped cooked meat.

  3. Moisten the mixture with hot water or beef broth.

  4. Roll the beef tightly and tie it securely with strings.

  5. Roast the stuffed beef in the hot oven until cooked through.
