Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and drain the turkey.

  2. Prepare the dressing by mixing salt pork, bread crumbs, salt, pepper, sage, egg, and milk.

  3. Boil the giblets until tender, chop fine, and mix with half of the dressing.

  4. Add enough giblet broth to moisten the dressing.

Stuff and truss

  1. Stuff the turkey with the dressing, sew up the openings, and tie the wings and legs close to the body.

  2. Rub the turkey with butter.

Roast

  1. Bake in a slow oven at 300°F (150°C) for four hours, basting frequently.

What each ingredient does

Bread crumbs
Form the bulk of the dressing and soak up moisture to give it body.
Salt pork
Adds fat and savory flavor that carries through the dressing as it cooks.
Egg
Binds the dressing so it holds together when spooned and served.
Milk
Moistens the bread crumbs so the dressing stays soft rather than dry.
Butter
Adds fat to the skin, promoting richer flavor and golden browning.
Giblets
Contribute meaty flavor to the dressing and the broth used to moisten it.

The step that matters

Moistening the dressing before stuffing. The dressing sits inside the bird and heats more slowly than the meat, so it must be cooked through. Adding enough broth keeps it moist and helps it cook evenly.

Swap the sage

How well each one fits the dish's main ingredients (pork, bread, pepper, egg, milk, turkey, butter):

  1. Sagethe original
  2. Nutmegfits about as well
  3. Thymefits about as well
  4. Parsleyfits about as well

Fit is the average pairing score against pork, bread, pepper, egg, milk, turkey, butter. Candidates are from the same food group and used in at least 100 recipes.
