What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable custard as it cools.
Egg yolks
Thicken the custard and add richness and a smooth texture.
Egg whites
Folded in whipped, they add lightness and an airy texture.
Milk
Forms the liquid base that the gelatine and eggs set into.
Sugar
Sweetens the custard and balances the richness of the eggs and milk.

The step that matters

Stirring the beaten egg yolks and sugar into the hot milk. Hot milk can scramble egg yolks if they are added too quickly. Adding them gradually while stirring steadily lets the yolks thicken the custard smoothly.
