Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Rub the inside of the turkey with coarse sea salt and hang it up to drain for one hour.

  2. Wipe the turkey dry if time allows.

Make and stuff

  1. Make the dressing by mixing bread crumbs with salt, pepper, sage, butter, chopped pork, egg, and enough water to moisten.

  2. Fill the crop first and sew it up, then fill the body and tie the legs to the body.

Roast

  1. Rub the turkey with partially melted butter for a nice brown color.

  2. Bake at 350°F (175°C) for 1.5 to 2 hours or more, depending on size, basting often.

What each ingredient does

Turkey
Is the main body of the dish, cooked whole so the meat becomes tender and juicy.
Bread crumbs
Soak up moisture and give the dressing a soft, bound body inside the bird.
Butter
Adds fat that carries flavor and helps the skin turn golden brown in the oven.
Pork, chopped fine
Adds fat and savory flavor to the dressing, keeping it moist as it cooks.
Egg
Binds the dressing so it holds together when cooked.
Sage
Contributes a warm, herbal aroma that complements the turkey and pork.

The step that matters

Basting and cooking time. A whole turkey cooks unevenly, and the thick breast and stuffing can stay underdone while the legs overcook. Basting keeps the surface moist, and checking doneness by size rather than just the clock helps the meat and dressing reach safe temperatures.

Swap the onion

How well each one fits the dish's main ingredients (turkey, bread, pepper, sage, butter, pork, egg):

  1. Capsicumfits better
