Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Flour the bottom of a roasting pan.

  3. Place the beef roast in the pan.

  4. Sprinkle salt, pepper, and a little flour over the top.

Roast

  1. Roast for 15 minutes per pound without adding water.

  2. Just before removing, add a little water to the pan to make gravy.

What each ingredient does

Beef roast
Is the main dish; its fat and connective tissue keep the meat moist and tender as it roasts.
Flour
Helps the surface brown and later thickens the pan juices into gravy.

The step that matters

Adding water to the pan. Water added early turns to steam around the roast, which slows surface browning and keeps the crust pale. Adding it only just before removing the roast lets the pan juices loosen for gravy without spoiling the browned exterior.
