Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Roast the turkey

  1. Preheat the oven to 300°F (150°C).

  2. Roast the turkey for four hours, basting it with the water in the pan.

  3. Prick the turkey to let the oil out.

  4. After two hours, make an incision between the legs and body to let the blood out and continue basting.

Make the dressing

  1. For the dressing, crumble the bread into fine pieces.

  2. Chop the onion finely and mix it with the crumbled bread.

  3. Add the egg and butter to the mixture.

  4. Moisten the bread with enough milk.

  5. Season with sage, salt, and pepper to taste.

Egg
Binds the dressing so it holds together when cooked.
Butter
Adds fat for richness and a softer, moister texture.
Milk
Moistens the crumbled bread so the dressing is not dry.
Onion
Adds savoury aroma and flavour to the dressing.
