Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat oven to 400°F (200°C).

  2. Butter the bottom of your baking dish to prevent sticking.

Layer

  1. Roll the oyster crackers and place a layer in the bottom of the dish.

  2. Using a fork, remove the oysters from their shells and layer them over the crackers.

  3. Season with salt, pepper, and small pieces of butter.

  4. Repeat layering with crackers and oysters until you are one inch from the top of the dish.

  5. Finish with a top layer of crackers and pour milk over the entire dish.

Bake

  1. Bake for 45 minutes, checking to ensure it doesn't dry out; add more milk with melted butter if needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and the savory body of the dish.
Oyster crackers
Absorb the liquid and give the layers a soft, bread-like structure.
Milk
Adds moisture that keeps the layers from drying out as they bake.
Butter
Adds richness and fat, and helps prevent sticking and drying.

The step that matters

Checking for dryness during baking. The crackers soak up liquid as they bake, so if the dish dries out the top can scorch and the texture turns tough. Adding milk with melted butter restores moisture and fat.
