Why it works: Tomato and pepper are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,923 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Escaloped Tomatoes
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat your oven to 350°F (175°C).
Grease a 2-quart baking dish with butter.
Layer and bake
Layer crushed crackers on the bottom of the dish.
Add a layer of sliced tomatoes, then sprinkle with pepper, salt, and small pieces of butter.
Repeat the layers two more times, finishing with a layer of tomatoes on top.
If the tomatoes are not juicy, add a little water to moisten them.
Bake in the oven until heated through.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Tomatoes
- Provide the main body and juice that moistens the layers as they bake.
- Crushed crackers
- Absorb tomato juices and add texture and savory structure between the layers.
- Butter
- Adds richness and fat, carrying flavor and helping the top brown lightly.
