Why it works: Potato and tomato match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 2,798 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the veal until thoroughly cooked. Remove bones and fat.

  2. Season the veal with coarse sea salt and black pepper. Make a nice gravy.

  3. In an earthen dish, layer the veal, then a layer of raw sliced potatoes, followed by sliced tomatoes, and top with another layer of veal.

  4. Prepare a soft crust by mixing flour, baking powder, butter, and milk until stiff. Cover the pie with this crust.

  5. Bake in a moderate oven at 350°F (175°C) until golden brown.
