What each ingredient does

Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavor.
Mustard seed
Adds pungent, sharp heat that flavors the pickling liquid.
Dry mustard
Contributes sharp, pungent flavor to the dressing.
Turmeric
Gives the chow-chow its characteristic yellow color and mild earthy flavor.
Green tomatoes
Supply firm, tart bulk that holds its shape through cooking and pickling.

The step that matters

Cook each vegetable separately until tender. Vegetables cook at different rates, so cooking them separately keeps each one tender without turning the softer ones mushy. Draining well afterward keeps excess water from diluting the vinegar dressing.
