What each ingredient does

Chicken
Forms the main body of the salad, giving it substance and a tender, meaty texture.
Hard-boiled egg yolks
Emulsify with mustard and oil to make a rich, smooth, creamy dressing.
Oil
Adds fat that, emulsified with the yolks, gives the dressing its smooth, creamy body.
Mixed mustard
Helps stabilise the emulsion so the dressing stays smooth and does not separate.
Vinegar
Adds acidity that brightens the rich dressing and balances its fat.
Celery
Adds crisp texture and a fresh, mild flavour to the chicken.

The step that matters

Adding the oil slowly to the yolks. Oil must be added gradually while mixing so it disperses into the yolks as tiny droplets. Adding it too fast breaks the emulsion, leaving a greasy, separated dressing instead of a smooth cream.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, mustard, vinegar):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
  4. Celerythe original

Fit is the average pairing score against chicken, egg, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
