Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Delicate Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Boil the rice in water until nearly done.

  2. Add milk and cook until the rice is soft.

  3. Beat the egg yolks with sugar, salt, and vanilla, then stir into the rice mixture.

  4. Remove from heat and fold in the beaten egg whites.

Top and bake

  1. Make a meringue by beating the remaining egg whites with sugar, then spread over the pudding.

  2. Bake in a 400°F (200°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw rice
Forms the body of the pudding as it softens and absorbs liquid.
Milk
Provides the creamy liquid that cooks the rice into a soft, custard-like texture.
Egg yolks
Thicken the pudding and add richness as they set with gentle heat.
Beaten egg whites
Lighten the pudding with air and help it set softly.
Sugar
Adds sweetness and helps the meringue stay glossy and stable.

The step that matters

Stirring the yolks into the rice mixture. Egg yolks can scramble if they meet hot liquid too quickly. Tempering them gradually, with some warm mixture added first, keeps the custard smooth and thickened.
