Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dumplings

  1. Make a biscuit dough crust using the flour.

  2. Pare, quarter, and core the apples, or use them whole after extracting the core.

  3. Roll out a piece of dough about 1/4 inch thick and place an apple in the center.

  4. Add sugar and allspice to the apple, then pinch the dough together to seal.

Bake and serve

  1. Place the dumplings in a baking pan, filling it adequately.

  2. Pour boiling water into the pan until it is half full.

  3. Bake in a 400°F (200°C) oven for 30 minutes.

  4. Serve hot with fruit sauce or sugar and milk.

What each ingredient does

White or graham flour
Forms the biscuit dough that encloses the apple and sets as the crust.
Tart apples
Provide the fruit filling, which softens and turns tender during baking.
Sugar
Adds sweetness and helps the apple flavor come through in the filling.
