What each ingredient does

Rice
Forms the entire dish; boiling in plenty of water cooks each grain until tender while starch is rinsed away.

The step that matters

Washing the rice in three waters. Rinsing removes the surface rice flour and loose starch that would otherwise make the cooked grains sticky and clumped together.
