Orange and Lemon Extracts

  1. Pare the orange or lemon to obtain the peel.

  2. Lay the peel aside to dry until you have enough.

  3. Place the dried peel in a tightly corked bottle.

  4. Cover the peel with alcohol.

  5. Let it stand for four to five days.

  6. Pour off the liquid and bottle it for use.
