What each ingredient does

Oat meal
Its starch thickens as it cooks, giving the mush its body and texture.
Water
Hydrates the oats and softens their starch into a soft, spoonable mush.

The step that matters

Adding the oats slowly while stirring gently. Oat starch absorbs water and swells quickly on contact. Adding the oats gradually and stirring gently keeps them from clumping into lumps, so they hydrate evenly into a smooth mush.
