Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Soften a little butter in a narrow cake tin.

Bake the eggs

  1. Break in 12 fresh eggs, adding salt and pepper to taste.

  2. Place small pieces of butter over the top, being careful not to break the yolks.

  3. Bake for 20 minutes, then set aside to cool.

Assemble

  1. Turn out the baked eggs and cut into slices.

  2. Place the egg slices between thin slices of buttered bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set to a firm, sliceable body when baked, holding the sandwich together.
Butter
Adds richness and moisture, and helps the eggs release from the tin and brown lightly.
Buttered bread
Provides a soft, contrasting base and carries the baked egg slices.

The step that matters

Place butter without breaking the yolks. Egg proteins set as they heat, so a broken yolk spreads and changes the texture of the baked eggs. Keeping yolks intact gives clean slices.
