Ice Cream

Why it works: Cream and gelatin match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

Ingredients

Directions

Prepare the base

  1. Soak the gelatin in 1 pint of milk for 1 hour.

  2. Heat the soaked gelatin and milk in a double boiler until fully dissolved.

  3. In a separate bowl, beat the eggs and mix in the sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets and stabilizes the frozen mixture, giving it a smooth, firm body.
Eggs
Add richness and emulsify the fat, helping the base freeze creamy.
Sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer.
Cream
Supplies fat for a rich, creamy texture and a smooth mouthfeel.
Milk
Forms the liquid base that carries the other ingredients and dissolves the gelatin.

The step that matters

Straining the hot gelatin mixture over the eggs and sugar. Pouring very hot liquid onto eggs too quickly can scramble them. Adding it gradually while whisking the eggs keeps the custard smooth and evenly thickened.
