What each ingredient does

Egg whites
Whipped to foam, they lift and lighten the mixture as it bakes and sets.
Egg yolks
Thicken the mixture and help it set firm when cooked.
Butter
Enriches the base and carries flavor through the flour roux.
Flour
Thickens the butter and cream into a stable sauce that holds the fish.
Cream
Adds moisture and richness, giving a soft, tender texture.
Cooked fish
Forms the main body of the timbale and supplies its savory flavor.

The step that matters

Folding in the egg whites. Whites hold air only when stiffly beaten, and overmixing or deflating them while folding makes the timbale dense rather than light. Fold gently so the air stays trapped as the mixture bakes.

Swap the almond

How well each one fits the dish's main ingredients (fish, pepper, butter, parsley, flour, egg, cream):

  1. Almondthe original
  2. Walnutfits about as well
  3. Pistachiofits about as well
  4. Chestnutfits less well

Fit is the average pairing score against fish, pepper, butter, parsley, flour, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
