Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the sugar and butter together.

  2. Add the water and flour, and mix well.

  3. Stir in the chopped walnuts.

  4. Gently fold in the egg whites mixed with baking powder.

Bake

  1. Pour the mixture into square pans.

  2. Bake for about 35 minutes in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped or folded in to trap air, helping the cake rise and turn light.
Baking powder
Releases gas in the batter, causing the cake to rise in the oven.
Flour
Forms the gluten and starch structure that sets the cake's crumb.
Butter
Adds fat for tenderness and flavor, and helps trap air when creamed with sugar.
Sugar
Sweetens the cake and helps create a tender crumb when creamed with butter.
Walnuts
Add crunch and a nutty flavor that contrasts with the soft crumb.

The step that matters

Gently fold in the egg whites mixed with baking powder. Folding rather than stirring keeps the air bubbles in the egg whites intact. Those bubbles and the gas from baking powder are what lift the cake, so overmixing deflates it.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, egg, flour, meat, butter):

  1. Almondfits better
  2. Walnutthe original
  3. Chestnutfits about as well
  4. Pecansfits about as well

Fit is the average pairing score against sugar, egg, flour, meat, butter. Candidates are from the same food group and used in at least 100 recipes.
