Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Provides the setting power that turns the warm liquid into a firm, jelled pudding.
Milk
Forms the base of the pudding and gives it a creamy body and mouthfeel.
Sugar
Adds sweetness and balances the flavour of the milk.
Vanilla
Adds aroma and a rounded flavour.

The step that matters

Dissolve the gelatine fully in the hot milk. Gelatine only sets when it is completely dissolved and evenly distributed through the liquid. Undissolved granules or lumps leave the set pudding grainy or weak, so the hot milk must be poured over the soaked gelatin and stirred until it melts before the mixture is strained and left to cool.
