Baked Mackerel

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mackerel

  1. Wipe the mackerel with a damp cloth and split it open. Remove the bones, head, and fins.

  2. Prepare the stuffing by mixing the beef suet, bread crumbs, savory herbs, and chopped parsley.

Stuff and bake

  1. Spread the stuffing inside the mackerel, fold it over, and place it in a greased paper bag. Drizzle a little oiled butter over the fish and secure the bag.

  2. Bake on a wire rack in a 350°F (175°C) oven for about 25 minutes.

Serve

  1. Serve plain or with anchovy sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mackerel
Forms the main body of the dish and carries the stuffing as it cooks.
Beef suet
Adds fat that keeps the stuffing moist and rich during baking.
Bread crumbs
Absorb fat and juices, giving the stuffing body and a soft texture.

The step that matters

Securing the paper bag. If the bag is not sealed tightly, steam and juices escape and the fish can dry out. A closed bag traps moisture so the fish cooks gently in its own steam.

Swap the parsley

How well each one fits the dish's main ingredients (beef, bread, butter):

  1. Pepperfits about as well
  2. Nutmegfits about as well
  3. Parsleythe original
  4. Thymefits about as well

Fit is the average pairing score against beef, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
