Fish Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the potato mash

  1. Mash the hot potatoes and mix with butter and milk.

  2. Season with salt, pepper, and nutmeg, and mix well.

Assemble the pie

  1. Remove skin and bones from the fish, flake it finely, and place it in a greased shallow pie dish lined with mashed potatoes.

  2. Season the fish with salt and pepper.

  3. Pour in the fish stock or fish sauce.

  4. Cover with remaining mashed potatoes, smooth the surface, and create a pattern with a fork.

  5. Brush lightly with beaten egg.

Bake

  1. Bake in a 350°F (175°C) oven for 25 to 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the topping, which crisps and browns as it bakes.
Butter
Adds richness and fat, giving the mash a smooth texture.
Milk
Adds moisture so the mashed potato becomes soft and spreadable.
Cold cooked fish
Provides the main filling, flaked so it blends into the sauce and layers.
Fish stock or fish sauce
Adds liquid and savory depth to the fish filling.
Egg
Brushed on top, it promotes browning and a glossy golden finish.

The step that matters

Smoothing and sealing the potato topping. Mashed potato spread thickly over the fish seals in the moist filling, and a smooth, even layer helps it brown evenly rather than drying or leaving wet spots.

Swap the nutmeg

How well each one fits the dish's main ingredients (potato, butter, milk, pepper, fish, egg):

  1. Parsleyfits about as well

  3. Thymefits about as well
