Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Creamed Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sauce

  1. Remove the gills from the oysters and stir the liquor into a bowl with the egg yolk and flour.

  2. Add lemon juice and cream or milk, then season with salt, pepper, and nutmeg.

Bake in parchment

  1. Cut each oyster in half and place them with the sliced mushrooms in a well-buttered parchment bag.

  2. Pour the prepared liquid into the bag and seal it securely.

  3. Place the bag on a wire rack in a 350°F (175 °C) oven and cook for about 12 minutes.

Serve

  1. Serve the oysters on a plate, pour the sauce over them, and garnish with chopped parsley, lemon slices, and pieces of toasted bread.

What each ingredient does

Oysters
Provide the main seafood body and briny flavour that the sauce surrounds.
Egg yolk
Thickens the liquid and gives the sauce a rich, smooth texture as it cooks.
Flour
Helps thicken the sauce so it clings to the oysters rather than running off.
Cream or milk
Adds moisture and richness, giving the sauce a softer, creamier body.
Lemon juice
Adds acidity that brightens the rich sauce and balances its creaminess.
Mushrooms
Add moisture and earthy flavour that combine with the oysters in the bag.

The step that matters

Seal the parchment bag securely. A tight seal traps steam so the oysters and sauce cook gently in their own moisture. A leak lets steam escape, which can dry the oysters and leave the sauce thin.
