Why it works: Turnip and carrot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,002 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Boiled Beef

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the salt beef in cold water for several hours.

  2. Peel and scrape the turnips and carrots, then cut them into quarters.

  3. Place the meat and vegetables in a well-greased bag.

  4. Add enough water to cover the contents of the bag.

  5. Fold the end of the bag and fasten it with wire clips.

Cook

  1. Place the bag on a cold wire grid in a preheated oven at 350°F (175°C).

  2. Cook for about 50 to 60 minutes.

Serve

  1. Remove the meat, place it on a hot dish, and garnish with the cooked vegetables.

  2. Pour a little of the cooking liquid over the meat and serve with boiled suet dumplings.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt beef
Provides the main protein and savory flavor, and it is salted so it must be soaked first.
Turnips
Add mild sweetness and a tender texture as they cook in the bag.
Carrots
Add natural sweetness and a tender texture as they cook in the bag.

The step that matters

Cook for about 50 to 60 minutes. Salt beef needs its long soak to remove excess salt before cooking. Sealing the bag with enough water keeps the meat moist, so it stays tender instead of drying out.

Swap the turnip

How well each one fits the dish's main ingredients (beef, carrot):

  1. Parsnipfits about as well
  2. Potatofits about as well
  3. Turnipthe original
  4. Onionfits about as well

Fit is the average pairing score against beef, carrot. Candidates are from the same food group and used in at least 100 recipes.
