Chicken Fricassee, with Mushrooms

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Trim the chicken joints and remove any projecting bones.

  2. Season with salt and pepper, then dust lightly with flour.

  3. Dip each piece of chicken in clarified butter.

Bake in a paper bag

  1. Place chicken in a well‑oiled paper bag with mushrooms, onion, carrot, and parsley.

  2. Pour in the chicken stock, close the bag, and secure it with clips.

  3. Cook on a wire grid in a 350°F (175°C) oven for 35 to 40 minutes.

Make the sauce and serve

  1. In a small bowl, whisk the egg yolk with cream and lemon juice.

  2. Remove chicken from the bag and place on a hot dish with mushrooms.

  3. Strain the cooking liquid into the egg mixture and mix well.

  4. Pour the sauce over the chicken, garnish with parsley, fleurons, and lemon slices if desired.

What each ingredient does

Chicken
Provides the main protein, which cooks gently in its own juices and stock inside the bag.
Egg yolk
Thickens the cooking liquid into a smooth, creamy sauce when gently combined.
Cream
Adds richness and body to the sauce, softening its flavour and texture.
Lemon juice
Adds acidity that brightens the sauce and balances the richness of the cream and yolk.
Preserved mushrooms
Contributes earthy flavour and moisture to the cooking liquid that becomes the sauce.

The step that matters

Combining the egg yolk mixture with the hot cooking liquid. Adding hot liquid to egg yolk too quickly or at too high a heat can scramble the yolk. Mixing it in gradually and stirring well keeps the sauce smooth and thickened rather than grainy.

Swap the clove

How well each one fits the dish's main ingredients (chicken, pepper, flour, butter, mushroom, onion, carrot):
