Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Filets of Haddock

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

  1. Cut the filets neatly from the haddock and cut each filet in two.

  2. Season with salt and pepper, then sprinkle with lemon juice.

  3. Place a small piece of butter on top of each filet.

  4. Put the filets in a well-buttered paper bag, fold it twice, and fasten the ends with clips.

  5. Cook for about 10 minutes on a wire grid in a hot oven (400°F / 200°C).
