Fish Cakes

Oven, in the book's wordsA very hot oven

Ingredients

Directions

The book says “a very hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the fish finely.

  2. Mash the potatoes and mix them with the fish, seasoning with salt and pepper.

  3. Melt the butter or dripping, then add the fish mixture and milk, and mix well.

  4. Shape the mixture into small, flat cakes of even size.

Coat and bake

  1. Beat the egg on a plate, then coat the cakes in egg and bread crumbs, reshaping as needed.

  2. Place the cakes in a well-buttered paper bag, close the end, and fasten with wire clips.

  3. Put the bag in a very hot oven (400°F / 200°C) on a grid shelf and cook for about 20 minutes, turning the bag twice during cooking.

Serve

  1. Cut open the bag with scissors and place the fish cakes onto a hot dish.

  2. Garnish with sprigs of parsley and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the cakes and gives them their savoury flavour.
Potatoes
Bind the fish together and keep the cakes moist and tender inside.
Butter or dripping
Adds fat and richness to the mixture and helps the cakes brown.
Egg
Helps the bread crumb coating stick and set during cooking.
Bread crumbs
Forms a crisp, golden outer coating on the cakes.

The step that matters

Coat and bake in the bag. The cakes must be well sealed in the buttered bag and turned during baking so they heat evenly and do not dry out or brown unevenly.

Swap the potato

How well each one fits the dish's main ingredients (fish, butter, milk, pepper, egg, bread):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
