Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the salt beef in cold water for several hours.

  2. Peel and scrape the turnips and carrots, then cut them into quarters.

  3. Place the meat and vegetables in a well-greased bag.

  4. Add enough water to cover the contents and fold the bag closed, securing it with wire clips.

Cook and serve

  1. Place the bag on a cold wire grid in a 350 °F (175 °C) oven.

  2. Cook for 50 to 60 minutes.

  3. Remove the meat, place it on a hot dish, garnish with the vegetables, and pour some cooking liquid over it.

  4. Serve with boiled suet dumplings.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt beef
Provides the main body of the dish, becoming tender as it cooks slowly in liquid.
Turnips
Add mild sweetness and a soft texture as they cook in the flavoured liquid.
Carrots
Add natural sweetness and a soft texture as they cook in the flavoured liquid.

The step that matters

Add enough water to cover the contents and fold the bag closed. If the bag is not sealed well or there is too little water, the contents can dry out or scorch while cooking. Enough liquid keeps the meat moist and helps it cook evenly.

Swap the turnip

How well each one fits the dish's main ingredients (beef, carrot):

  1. Parsnipfits about as well
  2. Potatofits about as well
  3. Turnipthe original
  4. Onionfits about as well

Fit is the average pairing score against beef, carrot. Candidates are from the same food group and used in at least 100 recipes.
