Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Chops and Steaks

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wipe the meat and trim off excess fat.

  2. Skewer the chops to keep their shape.

  3. Season with coarse sea salt and black pepper.

  4. Brush the meat with oiled butter.

  5. Place the meat in a well-greased paper bag.

Bake and serve

  1. Put the bag on a grid shelf in a hot oven at 400°F (200°C).

  2. Cook for 15 to 18 minutes, depending on thickness.

  3. Mix butter with salt, pepper, lemon juice, and chopped parsley for parsley butter.

  4. Serve the meat with parsley butter and pour any gravy from the bag over it.

What each ingredient does

Meat
Forms the main body of the dish; its fat and juices baste the meat inside the bag.
Butter
Adds fat and richness, carrying flavour and helping the meat brown and stay moist.
Lemon juice
Adds acidity that brightens the rich butter in the parsley butter sauce.

The step that matters

Cook for 15 to 18 minutes, depending on thickness. Meat cooked past its ideal point loses moisture as proteins tighten, so thickness should guide timing and the meat should be checked early.
