Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cutlets

  1. Flatten the veal cutlets with a meat mallet and trim the sides neatly.

  2. Scrape the bones clean and season each cutlet with salt and pepper.

  3. Melt the butter in a bowl and mix in the parsley, shallot, and lemon juice.

  4. Brush the mixture over both sides of the cutlets.

Bake in a paper bag

  1. Place the cutlets in a buttered paper bag, fold it, and fasten the ends.

  2. Cook the bag on a grid shelf in a 400°F (200°C) oven for 18 to 20 minutes.

  3. Open the bag, arrange the cutlets on a hot dish, and garnish with parsley and lemon quarters.

  4. Serve with a sharp tomato or piquante sauce. If desired, cook bacon slices in a separate bag and place on top of the cutlets.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Provide the tender meat that is cooked through in the sealed bag.
Butter
Adds richness and moisture, helping the cutlets stay juicy as they bake.
Shallot
Adds a mild, sweet onion aroma that flavours the coating mixture.
Lemon juice
Adds acidity that brightens the flavour of the rich butter and meat.

The step that matters

Sealing and timing the paper bag. The sealed bag traps steam so the thin cutlets cook gently and stay moist. Opening it too early or baking too long lets moisture escape and can dry the veal.

Swap the shallot

How well each one fits the dish's main ingredients (veal, butter, parsley, lemon, pepper):

  1. Carrotfits about as well
  2. Shallotthe original
  3. Capsicumfits less well
  4. Leekfits less well

Fit is the average pairing score against veal, butter, parsley, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
