Curried Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Mix flour, curry powder, and desiccated coconut on a plate.

  2. Season veal slices with salt and pepper.

  3. Add chopped apple to the veal.

  4. Coat the veal mixture with the curried flour.

Bake in a paper bag

  1. Place the mixture in a well buttered paper bag with cold water or stock.

  2. Seal the bag with wire clips. Fold in the corners of the bag.

  3. Cook in a preheated oven at 350°F (175°C) for 35 to 40 minutes.

  4. Remove the bag. Open the bag.

Serve

  1. Transfer contents to a hot dish.

  2. Sprinkle with lemon juice.

  3. Serve with plain rice.

What each ingredient does

Veal
Provides the main protein, which turns tender and moist when cooked gently in steam.
Flour
Coats the veal and thickens the cooking liquid into a light sauce.
Curry powder
Supplies the spiced, aromatic flavour that defines the dish.
Desiccated coconut
Adds subtle sweetness and a toasted, rich aroma to the curried coating.
Sour apple
Adds acidity and softens into the sauce, balancing the spices.

The step that matters

Sealing the paper bag. If the bag is not tightly sealed, steam escapes and the veal dries out and the sauce stays thin. A well sealed bag traps moisture so the meat braises gently in its own juices.

Swap the apple

How well each one fits the dish's main ingredients (veal, flour, coconut, pepper, lemon):

  1. Limefits better
  2. Mangofits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against veal, flour, coconut, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes.
