Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Trim off excess fat from the cold meat.

  2. Cut the meat into slices, then into small discs.

  3. Season the meat with salt and pepper, then sprinkle with flour.

Make the sauce

  1. In a small bowl, mix stock or water, Tarragon vinegar, sauce or mushroom ketchup, and chopped onion.

  2. Combine the mixture with the minced meat.

Bake and serve

  1. Place everything in a well-greased paper bag and seal it securely.

  2. Cook in a preheated oven at 400°F (200°C) for about 20 minutes.
