Chicken Fricassee, with Mushrooms

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Trim the chicken joints neatly and remove any projecting bones.

  2. Season the chicken with salt and pepper, then dust lightly with flour.

  3. Dip each piece of chicken in clarified butter.

Bake in the bag

  1. Place the chicken in a well-oiled paper bag with mushrooms, onion, carrot, and parsley.

  2. Pour in the chicken stock, close the bag, and secure it with clips.

  3. Cook on a wire grid in a 350°F (175 °C) oven for 35 to 40 minutes.

Make the sauce and serve

  1. In a small bowl, whisk the egg yolk with cream and lemon juice.

  2. Remove the chicken from the bag and place it on a hot dish with mushrooms.

  3. Strain the cooking liquid into the egg mixture and mix well.

  4. Pour the sauce over the chicken, garnish with parsley, fleurons, and lemon slices if desired.

What each ingredient does

Chicken
Provides the main protein, which firms and turns opaque as it cooks gently in the bag.
Egg yolk
Thickens the cooking liquid into a smooth, creamy sauce when gently heated.
Cream
Adds richness and body, softening the sauce and helping it coat the chicken.
Preserved mushrooms
Contribute earthy flavour and moisture to the cooking liquid and the sauce.
Chicken stock
Supplies moisture and savoury flavour for the chicken to steam and braise in.
Lemon juice
Adds acidity that brightens the rich cream and egg sauce.

The step that matters

Mixing the egg yolk into the strained liquid. Egg yolk thickens only when gently heated, and the hot liquid must be added slowly and stirred well so it does not scramble. Whisking the yolk with cream and lemon first helps it blend smoothly.
