Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Open the tin of salmon, drain the liquid, and place the fish in a bowl.

  2. Add the bread crumbs, pepper, salt, lemon juice, chopped cucumber, and beaten egg to the bowl and mix the ingredients thoroughly.

  3. Form the mixture into small flat rounds.

Bake and serve

  1. Place the rounds on a well-buttered baking bag, ensuring they are spaced apart, then secure the bag and keep it flat.

  2. Slide the bag into a 400°F (200°C) oven.

  3. Use a large fish slice to help put in and take out the cooked croquettes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the croquettes and supplies the savoury flavour.
Bread crumbs
Absorb moisture and help the mixture hold its shape while cooking.
Egg
Binds the mixture together so the rounds hold their form.

The step that matters

Forming and spacing the rounds. The mixture is soft and binds only as it sets. Flat, evenly sized rounds cook at the same rate, and spacing them on the bag lets heat reach each one so they do not stick together or stay raw in the middle.

Swap the cucumber

The recipe marks cucumber as optional. How well each one fits the dish's main ingredients (salmon, bread, pepper, lemon, egg, butter):

  1. Asparagusfits better
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Cucumberthe original

Fit is the average pairing score against salmon, bread, pepper, lemon, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
