Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wipe the meat with a cloth dipped in hot water, then with a clean dry cloth.

  2. Prepare the veal stuffing and lay it inside the loin, then fold the flap over and skewer it to secure.

  3. Place the meat in a good-sized bag and preheat the oven to 400°F (200°C).

Roast

  1. Put the bag on the grid in the oven.

  2. After 10 minutes, reduce the heat to medium and cook for an additional 40 minutes until golden brown.

What each ingredient does

Loin of lamb
Forms the main body of the dish, and its fat bastes the meat and helps it brown as it roasts.
Veal stuffing
Fills the cut of lamb, adding flavor and moisture as the meat cooks around it.

The step that matters

Reducing the heat after 10 minutes. Starting hot helps the outside begin to brown, and lowering the heat lets the thick joint cook through to the centre without the outside burning or drying out.
