Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour of the soup and body as it simmers into the stock.
Veal stock
Forms the savoury liquid base that carries the flavours of the soup.
Cream
Adds richness and a smooth, velvety texture to the finished soup.

The step that matters

Boiling the cream before straining it into the soup. Boiling cream can cause it to scorch on the pan base or separate, so it should be heated carefully and added to the hot soup just before serving.

Swap the mace

How well each one fits the dish's main ingredients (veal, celery, onion, cream):

  1. Garlicfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against veal, celery, onion, cream. Candidates are from the same food group and used in at least 100 recipes.
