Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Place the sliced onion and carrot in a roasting pan.
Put the roast on top of the vegetables and season with coarse sea salt.
Add some fat skimmed from soups to the pan.
Roast and make the sauce
Roast for 1.5 hours, basting frequently.
When the meat and vegetables are browned, add 1 pint of hot water.
If the sauce gets low, add a little warm water.
Finish and serve
Once done, strain the sauce, skim off the fat, and season with salt and pepper before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Three rib roast
- Provides the main meat, which becomes tender and browned during slow roasting.
- Fat skimmed from soups
- Coats the roast and pan, encouraging browning and adding richness to the drippings.
- Onion
- Sits under the roast, flavouring the drippings that form the sauce.
- Carrot
- Sits under the roast, adding sweetness and flavour to the pan drippings.
The step that matters
Basting frequently during roasting. Spooning hot fat over the meat keeps its surface moist and helps it brown evenly, while the drippings build flavour for the sauce. Skipping it can leave the outside dry and pale.
Swap the onion
How well each one fits the dish's main ingredients (carrot, pepper):

Fit is the average pairing score against carrot, pepper. Candidates are from the same food group and used in at least 100 recipes.
