Corned Beef Hash

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Chop the cold lean corned beef very fine.

  2. Chop the cold boiled potatoes.

  3. Mix equal parts of the chopped beef and potatoes with a little stock.

  4. Season with salt and pepper to taste, omitting salt if the beef is salty enough.

Cook

  1. Bake in the oven at 350°F (175°C) or fry in a pan like small omelets.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Provides the main meaty body and savory flavor of the hash.
Boiled potatoes
Add bulk and starch that bind the mixture and give it a soft, tender texture.
Stock
Adds moisture so the mixture holds together and does not dry out while cooking.

The step that matters

Season with salt and pepper to taste. Corned beef is already cured with salt, so adding salt without tasting can make the hash too salty. Tasting the mixture before seasoning keeps the balance right.

Swap the potato

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits about as well
  3. Carrotfits about as well
  4. Potatothe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
